An upgrade starts with a list: the Odoo version, every custom module, and every third-party app. Anything that will not move is ported or retired before we run a trial.
The trial is a copy of your database. We compare accounting, stock, and open orders with the system you use today. Production changes only after that check, and the rollback steps are written down.
